In the words of F. Scott Fitzgerald, Why do you drink champagne for breakfast? Isn’t everyone like that? I love serving this dish to my guests whenever I get the chance. With a breakfast charcuterie board or easy-to-make eggs.
Mimosa makes everything more festive. Isn't it? Maybe it's a bubble. Maybe it's pretty fluted glasses. But especially before lunchtime, when someone hands me a sparkling mimosa, it feels like the party is starting.
The recipe is this delicious and with only two ingredients, it's definitely filling. Grapefruit is available year-round at grocery stores, so look for ruby red in the winter. It makes a perfect cocktail not only for summer but also for the holidays.

Take your drink to the next level by dipping the rims of your champagne glasses in sugar for a festive twist. Colored sugar is also fun. Choose pink or blue for a baby shower, or red for Valentine's Day.

We usually reserve expensive champagnes to drink separately. For mimosas, use inexpensive champagne or sparkling wine.
We usually make mimosas using equal parts juice and champagne, but you can make them milder or stronger depending on your taste. When my kids were younger, my husband and I had a Christmas tradition of serving juice and sparkling grape juice in champagne flutes while we sipped mimosas. Now that I'm an adult, it's all about mimosas! Red cranberry juice mimosas are especially fun during the Christmas holidays.
For a sweeter taste, replace the juice with pink grapefruit juice. If you like your cocktail sweeter, try adding a little simple syrup. Saint-Germain elderflower liqueur or Grand Marnier also add a sweet flavor to mimosas.
Use a vacuum cork between pours of sparkling wine or champagne. We always cork any leftover wine, especially with sparkling wines, where we want to preserve the bubbles for as long as possible.
Don't save mimosas for special occasions. Life is too short for that. Why not surprise your loved one with a grapefruit mimosa this weekend?
