No one likes dry chicken. The extra step of churning compound butter is exactly what prevents this. Compound butter is basically butter mixed with herbs and seasonings. Any flavor you want! In this recipe, we make a roast chicken compound butter with garlic, paprika, oregano, chipotle paste, and lime (both zest and juice).
All you have to do is carefully lift the skin of the chicken and fill and spread the butter directly on top. The extra layer of fat in contact with the chicken helps keep it moist and juicy while also retaining the flavor of the meat. You should also apply compound butter to the surface of the chicken. This will make the skin of the roasted chicken crispy. Compound butter is also great for seasoning chicken throughout the roasting process.
What to Serve with Chipotle Roast Chicken

- Buttermilk isn't too hard to find in supermarkets. But if you can't find any, you can easily make it at home in just 5 minutes. Add one tablespoon of lemon juice per cup of whole milk and let the mixture sit until small clumps form. Voila, this is how you make homemade buttermilk for cooking!
- As mentioned above, using compound butter is important to keep your roasted chicken moist and juicy while retaining flavor! All you have to do is get your hands dirty, lift the skin, and stuff the compound butter underneath. Apply to skin and reserve some for basting.
- I recommend using: meat thermometer When cooking a roast. Monitoring temperature is the most accurate way to know if your meat is fully cooked and ready. For roasted chicken, maintain an internal temperature of 75°C / 165°F.. Simply insert a meat thermometer into the thickest part of the chicken and check the temperature. Or, you can use a wireless meat thermometer to monitor internal temperature from your phone!
- Cooking time for chicken will vary depending on the size of the chicken. The heavier and larger the chicken, the longer it will take to cook fully. This recipe contains a whole chicken weighing about 1 kg and takes about 1 hour to cook. Use a meat thermometer to check whether the chicken is done.
- After the chicken is cooked, let it rest for a while while you prepare the gravy. Like beef and lamb, chicken needs rest to allow the juices to reabsorb into the meat.

Chipotle Roast Chicken with Gravy
Enhance your usual roast chicken dinner with this Chipotle Roast Chicken, featuring vibrant, mouth-watering flavor that everyone will love!
- One middle Whole chicken (about 1kg)
Marinade and Spice Rub Ingredients
- One cup Buttermilk*
- 1½ teaspoon garlic powder
- 1½ teaspoon onion granules
- One tablespoon paprika
- ½ tablespoon cumin powder
- One tablespoon chipotle paste
- salt
- black pepper
Compound Butter Ingredients
- 4-5 tablespoon butter
- One Lime (both zest and juice)
- One teaspoon chipotle paste
- One teaspoon paprika
- One teaspoon oregano
Ingredients for Chicken Stuffing
- ½ large in size onion
- 3-4 cloves garlic
- 3-4 twigs fresh thyme
- One Lime halved
gravy ingredients
- One tablespoon butter
- ½ onion chopped
- 2 tablespoon flour
- 2 cup chicken stock
- One teaspoon honey

Marinate the whole chicken in buttermilk for at least a few hours, or ideally overnight.
1 medium-sized whole chicken (about 1kg), 1 cup buttermilk*

Combine all dry spices and seasonings in a small bowl.
1½ teaspoon garlic powder, 1½ teaspoons onion granules, 1 tablespoon paprika, ½ tbsp cumin powder, salt, black pepper

Discard remaining buttermilk. Spread the seasoning sauce all over the chicken.

Spread the chipotle paste all over the chicken.

Making Compound Butter

Using a blender or by hand whisk, mix all complex butter ingredients until combined. You can make it in advance and store it in the refrigerator.
4-5 tablespoons of butter, 1 lime (both zest and juice) 1 teaspoon chipotle paste, 1 teaspoon paprika, 1 teaspoon oregano

Lift the chicken skin slightly and spread half of the compound butter under the skin.
Stuffing and Grilling Chicken

Preheat the oven to 180°C.
-
Stuff the chicken with onions, garlic, and lime.
½ large onion, 3-4 cloves of garlic, 1 lime, 3-4 sprigs of fresh thyme

Place the chicken in a roasting tin and cook in the oven for 1 hour.

Raise the oven temperature to 200°C. Brush the chicken with the remaining compound butter and cook for another 10 minutes until the chicken is tender. 75°C / 165°F internal temperature. (You can check the internal temperature by inserting a thermometer into the thickest part of the chicken.)

Once the chicken is cooked, remove it from the oven. Let stand while you prepare the gravy.
Making gravy

Melt the butter in a saucepan over medium heat. Sauté for a few minutes until the onions are soft.
1 tablespoon butter, ½ onion

Stir in flour until completely coated. Pour all the chicken stock Chicken Juice from a Baked Can. Continue stirring until it thickens.
2 tablespoons of flour, 2 cups chicken stock

Add honey and season to taste.
1 teaspoon honey

Optional Step: Strain the gravy.
